Abstract: | Lipid peroxidation can be described as a process in which oxidizers, such as free radicals or non-radical particles, attack lipids containing carbon-carbon double bonds, particularly polyunsaturated fatty acids (PUFAs). This involves the removal of hydrogen from carbon with the introduction of oxygen, leading to the formation of peroxyl radicals and hydroperoxides, as previously described. Glycolipids, phospholipids (PL), and cholesterol (Ch) are also well-known substances that contribute to damage and can lead to potentially lethal peroxidative modifications.
